To start making spiced carrot celery soup, heat olive oil in a large pot over medium heat. add finely chopped shallot, garlic, and ground cumin. saut„© until the shallot becomes translucent and fragrant.
Add the sliced carrots and celery stalks to the pot. saut„© them for a few minutes until they start to soften.
Add turmeric powder, ground coriander, red chili flakes, black pepper, and garam masala to the pot. stir well to coat the vegetables with the spices.
Pour in 4 cups of water and bring the mixture to a boil. reduce the heat, cover the pot, and let it simmer for about 20-25 minutes, or until the carrots and celery are tender.
Allow the soup to cool slightly, then use an immersion blender or a regular blender to puree the soup until it reaches a smooth consistency.
