To create the sindhi mixed lentil delight (sindhi tidali dal), begin by washing the chana dal, split green moong dal, and urad dal thoroughly. soak them together in a bowl of water for around 2 hours.
In a pressure cooker, add the soaked and drained dals, salt, turmeric powder, green chilli, chopped tomatoes, and grated ginger.
Pour about 3 cups of water into the pressure cooker and pressure cook the mixture for 4 whistles. turn off the heat and allow the pressure to release naturally.
Once the pressure is released, open the lid of the pressure cooker and gently mash the cooked dals.
For the tadka, heat ghee in a tadka pan over medium heat. once the ghee is hot, add cumin seeds and asafoetida, allowing them to sizzle.
