To prepare the party sev puri with potato and pomegranate mint mayo, boil the potatoes until they are cooked through. allow them to cool, then peel and dice them into small pieces.
In a mixing bowl, combine the diced potatoes, pomegranate seeds, finely chopped mint leaves, finely chopped onion, finely chopped green chillies, freshly squeezed lemon juice, black salt, and chopped coriander leaves. mix well to make the potato and pomegranate filling.
Arrange the papdi puris on a serving platter.
Spoon a small amount of the potato and pomegranate filling onto each papdi puri.
Top each puri with a dollop of mint mayo.
