To make the aam panna pani puri, start by pressure cooking the raw mango. peel the raw mango and place it in a pressure cooker with 1/2 cup of water. cook for 4 whistles until the mango becomes soft and tender.
Allow the pressure to release naturally and then drain the water. transfer the cooked mangoes to a bowl and let them cool.
Once cooled, extract the pulp from the cooked mango and discard the seed.
In a mixer jar, combine the mango pulp, mint leaves, cumin powder, black salt, black pepper powder, and sugar. grind into a smooth puree.
Transfer the aam panna pani into a serving bowl and add 1 cup of water. mix well and adjust the taste and spices if needed. chill in the refrigerator.
