To prepare pineapple and mint granita, start by heating sugar, fresh mint leaves, and water in a pan until the sugar completely dissolves. set it aside and let the mint infuse the syrup.

Once cooled, discard the mint sprigs from the syrup.

In a blender, combine the pineapple, mint-infused sugar syrup, and ice cubes. blend until you get a smooth mixture.

Pour the mixture into a 9-inch freeze-safe or baking pan and place it in the freezer for about an hour.

After an hour, use a fork to scrape the partially frozen granita to break up any ice crystals.
