To begin making guacamole quesadilla with mint mayo, prepare the tortilla by mixing wheat flour, refined flour, and salt in a bowl. add enough water to form a soft and pliable dough. set it aside.
For the guacamole, mash the avocado in a bowl. add alphonso mango pulp, finely chopped onions, red capsicum, yellow capsicum, minced garlic, chopped green chilies, chopped coriander leaves, lemon juice, and salt. mix well and adjust the seasoning if needed.
Divide the dough into small equal balls and roll each ball on a floured surface to form a 6-inch diameter tortilla.
Heat a flat skillet and lightly toast each tortilla on both sides using a teaspoon of oil.
Once the tortillas are ready, spread 1 tablespoon of delmonte mint mayo on one tortilla. top it with the prepared guacamole and spread it evenly. cover it with another tortilla to create a quesadilla.
