To prepare the almond spiced mutton curry - parsi style, start by making the almond gravy masala. soak almonds in hot water for 10 minutes and then drain the excess water. transfer the soaked almonds to a mixer-jar.
In the mixer-jar, add ginger, garlic, dried red chillies, cinnamon, black peppercorns, and cloves to the soaked almonds. grind all the ingredients into a smooth paste by adding some water as needed. set the masala paste aside.
Wash and clean the mutton pieces and then soak them in hot water for about 10 minutes. this will help remove impurities and tenderize the meat.
In a pressure cooker, add the washed and cleaned mutton, bay leaves, salt, and 1/2 cup of water. pressure cook the mutton for 3 whistles. turn off the flame and allow the pressure to release naturally.
Heat a skillet over medium heat and add ghee. once the ghee has melted, add sliced onions and cook until they turn light brown.
