To prepare the spicy caramelized sweet potatoes, start by cutting the sweet potatoes into desired shapes and soak them in cold water. this will help in removing excess starch.
In a saucepan, bring water to a boil with a teaspoon of salt. add the soaked sweet potatoes and boil until they are partially cooked. strain the potatoes and allow them to cool on a flat plate.
In a mixing bowl, coat the partially cooked sweet potatoes evenly with corn flour.
Heat a flat nonstick skillet, drizzle some oil, and add the coated sweet potatoes. toss them until they turn crispy and light brown. set aside.
In another flat skillet, wipe off any water and add the sugar. keep the heat low and let the sugar slowly melt. use a fork to evenly combine the sugar until it reaches a caramel state, turning dark brown.
