To prepare the goan style sana (steamed rice cakes) recipe, start by soaking parboiled red rice, basmati rice, and urad dal split in water for at least 4 hours.
After 4 hours, grind the soaked rice and dal to a smooth paste. the batter should have a smooth consistency, not grainy.
In a separate bowl, mix coconut toddy (or coconut water), active dry yeast, and sugar. let it ferment for at least 4 hours to allow the batter to rise.
Keep the bowl in a warm place for better fermentation.
Once the batter has risen well, add a pinch of salt and stir until the salt is evenly distributed.
