To prepare the parsi potato and egg delight, start by deep frying the potato straws in a kadai until they turn crisp and golden. once fried, drain the excess oil by placing them on a kitchen towel and set aside. for a healthier alternative, you can also choose to air fry them using an air fryer.
In a pan, heat the ghee and add the chopped tomatoes and the fried potato straws. spread them out to create a thick layer at the bottom of the pan.
Gently press down with a spatula to ensure an even and compact layer of potatoes.
Sprinkle the chopped fresh coriander leaves over the potatoes, creating a flavorful base for the dish.
Carefully crack two eggs over the layer of potatoes and coriander leaves.
