How To Cook?

1

To prepare the spiced red bean and rice pilaf, start by soaking the red kidney beans (rajma) in water for at least 8 hours.

2

Once the beans are well soaked, cook them in a pressure cooker with a pinch of salt until they become soft and tender.

3

Drain any excess liquid from the cooked rajma, reserving it for future use like making soup or vegetable stock. we will only need the cooked beans for the pilaf.

4

In the meantime, rinse the basmati rice in cold water and set it aside.

5

Use a mortar and pestle to crush the cardamom pods, cinnamon stick, and cloves into a fine powder. set this spice blend aside.
