Roast quinoa: begin by dry roasting the quinoa in a large pan over medium heat for about 3 to 5 minutes until a roasted aroma develops. set aside once done.
Prepare vegetables: heat avocado oil in the same pan over medium-low heat. once hot, add mustard seeds, ginger, curry leaves, and sliced green chillies. when the mustard seeds start crackling, incorporate diced onions and saute until they turn translucent and soft.
Vibrant peppers: introduce assorted bell peppers (red, yellow, green) to the pan along with turmeric powder and the mixed vegetables. saute for a few minutes until the vegetables start to soften.
Add tomato: mix in diced tomatoes and sprinkle a pinch of salt. allow the tomatoes to cook for a couple of minutes, infusing the dish with their flavors.
Quinoa and water: pour in 2 cups of water to the vegetable mixture. once the water reaches a brisk boil, add the roasted quinoa and let it cook for about 4-6 minutes on medium heat.
