Begin by rinsing the black rice and barley separately under cold water until the water runs clear.
In a saucepan, add 1 cup of water and bring it to a boil. add the rinsed barley to the boiling water and let it cook over medium heat until it's tender but still has a slight chew, about 25-30 minutes. once cooked, drain any excess water.
In another saucepan, add 2 cups of water and bring it to a boil. add the rinsed black rice and reduce the heat to low. cover and let it simmer for about 25-30 minutes until the rice is cooked and the grains are fluffy. once done, drain any excess water.
While the grains are cooking, you can prepare the rest of the ingredients. finely chop the garlic clove and set it aside.
In a small skillet, heat the extra virgin olive oil over medium heat. add the chopped garlic and saut„© until it becomes fragrant and golden. remove from heat and set aside.
