Making dough for langcha: in a bowl, combine milk powder, semolina, mawa, baking soda, castor sugar, and whole milk. mix well to form a soft dough.
Cover the dough with a damp cloth and let it rest for 10 minutes.
After 10 minutes, add a pinch of food color (optional) and powdered sugar. mix well and let it rest for another 5 to 10 minutes.
Wet your hands and take a small amount of dough. shape it into oblong langcha by pressing it with your hands. keep the size of the sweets small, as they will puff up during frying.
Making sugar syrup: while the dough is resting, prepare the sugar syrup. in a large pan, add sugar and water in a 1:1.25 ratio. boil until the sugar dissolves completely. add a pinch of cardamom powder and mix well. set aside.
