To prepare the nutty khurchan mawa delight recipe, heat ghee in a pan. fry the chopped cashews and raisins until they turn golden, then remove and set them aside.
In the same pan, add chickpea flour (besan) and roast until it emits a delightful aroma and turns a rich brown color.
Transfer the roasted besan to a bowl and sift it through a sieve to ensure a smooth texture.
Add the ghee khurchan to the sifted besan, and gently combine using a spoon or fork. set this mixture aside.
In a separate pan, heat the khoya (mawa) until it softens. add jaggery and milk, and stir well to combine.
