To make crispy ash gourd fritters, start by soaking the whole urad dal in water for 4-5 hours.
After soaking, drain the water from the dal and use a mixer grinder to grind the soaked dal along with green chillies into a fine paste.
Make sure to add only a minimal amount of water to achieve a thick batter consistency.
Transfer the ground batter into a mixing bowl and add the diced ash gourd pieces to it.
Season the mixture with salt and a pinch of baking soda.
