Begin by boiling 2 small to medium-sized potatoes until they are thoroughly cooked and can be mashed easily. you can use a steamer or pressure cooker for this step.
In a pan or bowl, take the amaranth flour. if you have whole amaranth grains, you can grind them at home to make the flour. half a cup of amaranth grains should yield about three-fourth cup of flour.
Once the potatoes are slightly hot, peel and mash them lightly. add the mashed potatoes to the amaranth flour.
Next, add the crushed green chili paste, cumin powder, and rock salt (sendha namak). you can also include chopped coriander and ginger paste if desired. mix all the ingredients well.
Gradually add 1 to 2 tablespoons of water to the mixture and knead it into a smooth dough. the amount of water required may vary based on the quality of the flour, so add it accordingly. be cautious not to add too much water. allow the dough to cool to room temperature as it might be slightly warm due to the addition of hot mashed potatoes.
