To prepare homemade rice noodles (idiyappam/sevai), start by washing the raw rice thoroughly and soaking it in water. make sure the rice is completely immersed in water.
Allow the rice to soak for about 2 hours.
After soaking, transfer the rice to a mixer and grind it to obtain a smooth paste. the consistency should be semi-thick, pourable, and not too liquidy.
The next step is to make steamed dumplings or idlis from the rice batter, and then use a sevai maker to make the idiyappam/sevai noodles.
Grease idli molds and fill them with the sevai/idiyappam batter. steam the idlis for about 10 minutes.
