Gather all the ingredients and keep them separately on a plate or in bowls.
Heat a wide, thick-bottomed pan or kadai with a handle over low heat.
Add 2 cups of thin poha or rice flakes to the pan. keep the flame low.
Roast the poha by gently stirring and shaking the pan to ensure even roasting. avoid excessive stirring, as it may break the delicate poha flakes. roast for about 3 to 4 minutes until the flakes become crisp. be cautious not to brown or burn them by using a high flame.
Transfer the roasted poha to a plate and set it aside.
