Now add the tomato puree to the tempering and cook on medium flame until the raw aroma of the tomato disappears. then add grated ginger and continue cooking until the oil separates from the mixture.
Mix turmeric, kashmiri red chili powder, and ground coriander powder with 1 tsp of water to make a thick paste. add this paste to the tomato puree and mix properly.
Add jaggery (gur) and salt to the mixture, then add a teaspoon of water and cook until the oil separates.
Add the boiled baby potatoes to the mixture and coat them properly with the spices. add 1.5 cups of water to the pan.
Cover the pan with a lid and cook until the potatoes are well cooked. once the potatoes are done, adjust the water and place the fried papad on top of the potatoes. cover the pan with the lid again and cook for 3-4 minutes.
