In a bowl, whisk the yogurt until smooth. add ginger paste, ginger garlic paste, coriander leaves, green chilies, mustard oil, lime juice, salt, turmeric, garam masala, chaat masala, kashmiri red chili powder, and kasoori methi. mix all the ingredients well to form a fine smooth paste.
Parboil the potatoes and then add them to the prepared marinade. mix well, ensuring that the potatoes are coated evenly. marinate the potatoes for at least 4 hours in the refrigerator.
Preheat the grill. arrange the marinated potatoes on skewers and place them on the grill, about 4 inches from the heat source. turn the skewers regularly to ensure even cooking. grill the potatoes until they develop brown spots and are cooked through, which takes approximately 7-8 minutes.
Baste the potatoes with oil at intervals to enhance their flavor and prevent them from drying out.
Remove the grilled potatoes from the heat and serve them hot. optionally, garnish with onion rings and lemon wedges for added freshness.
