Soak the fenugreek seeds overnight or for a minimum of 3 hours. drain the water and boil fresh water in a pan. add the soaked and drained fenugreek seeds to the boiling water and cook for 3 minutes. drain the water and optionally wash the fenugreek seeds to remove any remaining bitterness.
Heat oil in a pan and add mustard seeds. once the seeds start to crackle, add cinnamon and asafoetida. saute for a few seconds.
Add finely chopped tomatoes, turmeric, red chilli powder, garam masala, and coriander seed powder. add salt as per taste. fry for a minute or two until the tomatoes turn mushy and release oil.
Add the cooked fenugreek seeds and saute for a minute.
Add 2 cups of water and bring it to a boil. tear the urad dal papads into pieces and add them to the boiling water.
