Soak the urad dal in water for about 2 hours.
Strain and grind the dal to a smooth batter along with green chillies, ginger, asafoetida, and salt. add little water to achieve a thick and smooth consistency.
Beat the curd along with salt, sugar, and coconut to a smooth consistency. refrigerate it before frying the vadas.
Heat oil in a kuzhi paniyaram pan. add a drop of batter into the oil to make the vada. fry until the vada turns golden brown. repeat the process with the remaining batter.
Drain the vadas on a paper napkin.
