To prepare bajra methi vada, in a mixing bowl, combine pearl millet flour (bajra), whole wheat flour (atta), finely chopped fenugreek leaves (methi), red chili powder, coriander powder, salt, green chili, and yogurt (curd).
Rub the ingredients between your fingers to bring them together, forming a slightly lumpy mixture.
Gradually add water and knead the mixture into a stiff dough. be cautious not to add too much water at once, as it might make the dough too moist.
Cover the dough and let it rest for 15-20 minutes.
In a separate small bowl, mix cumin seeds, white sesame seeds, and carom seeds (ajwain), and set the mixture aside.
