To begin making the spicy chana dal vada, wash the chana dal thoroughly and soak it in water overnight.
The next day, drain the soaked chana dal and grind it in a mixer to a thick, coarse paste, adding very little water as needed. the dal should have a firm texture.
Transfer the ground dal into a mixing bowl.
To the dal, add finely chopped onion, minced green chilli, crushed garlic, coriander leaves, cumin seeds, red chilli powder, and salt as required.
Mix all the ingredients together to form a thick, soft dough.
