To prepare spicy chicken rasam delight, start by cleaning and washing the boneless chicken thighs.
In a pressure cooker, combine the chicken, minced shallots, ripe tomato, red chilli powder, turmeric powder, and salt to taste. add 4 cups of water.
Pressure cook for 1 whistle and then reduce the flame to low. cook for an additional 5 minutes before turning off the heat.
While the chicken is cooking, prepare the rasam spice powder. in a grinder, blend together fennel seeds, black peppercorns, cumin seeds, and dried red chilies.
Add coriander powder to the ground spice mix and blend again. transfer this spice powder to a bowl.
