Begin by washing the chicken pieces and marinating them with salt for half an hour.
In a mixer jar, grind the cashew nuts with some water until smooth to make a cashew nut paste.
In a skillet, dry roast the green cardamom, black cardamom, mace, and nutmeg until fragrant. allow them to cool and then grind them to a fine powder. we will need about 3/4th tablespoon of this masala for the recipe, and you can store the rest in an airtight container for future use.
In a kadai, heat oil for deep frying the chicken on medium-high flame. once the oil is hot, add the chicken pieces gradually and fry them for about 3 minutes until they are lightly golden and cooked partially. you can also choose to shallow fry the chicken if you prefer using less oil.
In a separate kadai, heat a bit of oil and add cloves, green cardamom, black cardamom, and cinnamon stick. saute them until fragrant.
