In a pan, melt the butter over medium heat. add the boneless chicken breast pieces and cook them for about 10 minutes, flipping them halfway through. once cooked, transfer the chicken pieces to a plate.
In the same pan with the remaining butter, add minced garlic and chopped mushrooms. saute them for 3-4 minutes until the mushrooms are slightly browned. add the all-purpose flour and saute for an additional minute. pour in the milk and cook for 6-7 minutes, stirring constantly, until the sauce thickens. adjust the salt to taste. then, add the boiled noodles, grated cheese, black pepper, red chili flakes, and dried oregano. cook for an additional 2-3 minutes, allowing the flavors to combine.
Add the cooked chicken pieces, spinach leaves, and halved cherry tomatoes to the pan. cook for 2 minutes, ensuring the chicken is well-coated with the sauce and the tomatoes are slightly softened.
Preheat the oven to 180 degrees celsius. transfer the chicken and mushroom mixture to a square baking dish. cover the dish with foil and bake in the preheated oven for 20 minutes. this will help meld the flavors together and create a creamy casserole.
