In a small saucepan, bring water to a boil. add quinoa and reduce the heat. simmer, covered, until the liquid is absorbed, which takes about 12-15 minutes. remove from heat and fluff the quinoa with a fork.
Meanwhile, place the carrot in a food processor and pulse until coarsely chopped. add the white kidney beans and process until they are chopped. transfer the mixture to a large bowl. mix in the cooked quinoa, breadcrumbs, green onions, egg, cumin, salt, and pepper. shape the mixture into 8 patties.
In a large skillet, heat the olive oil over medium heat. add the patties and cook for about 3-4 minutes on each side, or until a thermometer reads 160ÔøΩf (71ÔøΩc). be careful while turning the patties. if desired, serve with sour cream and cilantro on the side.
