Begin by washing the whole masoor dal and draining excess water. pressure cook the dal in a pressure cooker with 2 cups of water and a pinch of salt until you hear 3 whistles. once done, release the pressure naturally and mash the dal coarsely. avoid over-mashing.
In a heavy-bottomed pan, heat sunflower oil. add bay leaves and a pinch of asafoetida (hing). then, add cumin seeds and let them crackle.
Add the chopped ginger and garlic to the pan. saut„© for a minute until they release their aroma.
Now, add the sliced onions and saut„© until they become translucent.
Add the chopped tomatoes along with all the spice powders except for garam masala (red chilli powder, coriander powder, turmeric powder). cook the tomatoes until they are softened and the raw smell disappears. you can add a little water to help with the cooking process.
