Begin by preparing the fresh tomato sauce. blanch the ripe tomatoes in hot water, peel the skin, and chop them.
Heat a tablespoon of olive oil in a pan. add finely chopped onions and garlic. saute until they turn translucent.
Add the chopped tomatoes, paprika powder, italian mix herbs, salt, pepper, and a teaspoon of sugar. cook the mixture until the tomatoes break down and the sauce thickens. set it aside.
Cook the spaghetti in a pot of boiling salted water until al dente. drain and set aside.
In a pan, heat the remaining olive oil. add minced garlic and saut„© until fragrant.
