Heat a heavy-bottomed pan over medium heat and drizzle the oil. once the oil is heated, scatter the cumin seeds and let them sizzle for a few seconds.
Add the mixed vegetables to the pan, followed by 1/2 teaspoon of salt, turmeric, and cumin powder. mix well and saute for 1 minute.
Scatter the rolled oats into the pan, mix everything together, and pour in the water. sprinkle the remaining salt and bring the water to a boil. reduce the heat to medium and let it simmer for 3 to 4 minutes, or until the oats are cooked through and the mixture turns creamy.
Taste and adjust the seasoning with salt if needed.
Serve the savory vegetable oatmeal warm. top it with a boiled egg, a drizzle of ghee, fresh cilantro, and a sprinkle of cracked black pepper.
