Heat a flat skillet with oil and saut„© the minced garlic for a few seconds. add the sweet corn and toss for another 10 seconds.
Next, add the shredded spinach to the skillet and saut„© until the leaves are just cooked. avoid overcooking the spinach.
Season the saut„©ed spinach and corn with red chilli flakes, thyme leaves, and salt. mix well and set it aside.
To prepare the oats, take a saucepan and add the instant oats and water. whisk continuously while cooking until the oats thicken. make sure no lumps form. this will take about 5 minutes.
To serve, take a wide bowl and add the cooked oats. top it with the saut„©ed spinach and corn mixture.
