In a large bowl, combine the idli rice, soya beans, urad dal, fenugreek seeds, and chana dal. rinse the ingredients thoroughly with water.
Add enough water to cover the ingredients and let them soak overnight or for at least 8 hours.
After the soaking time, drain the water and transfer the soaked ingredients to a blender. add water as needed and grind everything into a smooth batter. the batter should have a slightly thick consistency.
Transfer the batter to a clean bowl, cover it, and let it ferment for 6-8 hours. fermentation will depend on the weather conditions, and the batter should rise and become slightly airy.
Once the batter is well-fermented, add salt to taste and mix it in gently.
