To begin making maharashtrian amti, rinse the dal thoroughly under water.
In a pressure cooker, add 2 cups of water, turmeric powder, and the rinsed dal. cook on high heat.
Once you hear a whistle, reduce the heat and allow 2 more whistles to occur.
Turn off the heat and let the pressure release gradually on its own.
Once the pressure is fully released, uncover the cooker and mash the dal with the back of a ladle to create a uniform, well-cooked texture.
