To create the maharashtrian jaggery and wheat flour delight, start by heating a pan and adding the semolina (sooji) to it.
Dry roast the sooji until it turns golden and emits a nutty aroma. once done, set it aside.
In the same pan, add sunflower oil and heat it over a medium flame.
Add the wheat flour (atta) to the pan and roast it on low heat until it becomes fragrant and changes color slightly.
Stir continuously to prevent burning and ensure even roasting.
