To prepare the odia style chana dal with potato & pumpkin curry, begin by dry roasting 3 teaspoons of cumin seeds along with 8 red chillies until aromatic. be careful not to burn the seeds. grind this mixture into a powder and set aside 1 teaspoon for later use. store the remaining powder in an airtight container.
Wash the chana dal and soak it. also, cut the potatoes and pumpkin into cubes and keep them aside.
In a pressure cooker, add the soaked chana dal, cubed potatoes, pumpkin, salt, and turmeric. cook until the cooker releases one whistle. do not overcook the chana dal.
In a separate pan, heat ghee and add cumin seeds, remaining dry red chillies, and bay leaf. once they start to splutter, add grated ginger and saute for a minute.
Add chopped tomatoes to the pan and cook until they become soft.
