How To Cook?

1

Prep the dough: in a mixing bowl, combine the whole wheat flour and fine semolina (chiroti rava).

2

Incorporate ghee: add ghee to the dry ingredients and crumble them together with your fingertips. this will create a sandy texture.

3

Binding agent: gradually add water to the mixture and knead the ingredients into a firm and smooth dough. let the dough rest for about 15-20 minutes.

4

Portion and shape: divide the dough into small, equal-sized portions. roll each portion between your palms to create smooth balls.

5

Rolling out: take one dough ball and roll it out into a flat disc using a rolling pin. aim for a thickness similar to a traditional mathri.
