To prepare the grilled herring with spicy mustard and celery marinade, in a mixing bowl, combine ginger garlic paste, apple cider vinegar, extra virgin olive oil, chopped celery, mustard (kasundi), lemon juice, salt, and red chilli flakes.
Rub the herring fillets with the prepared marinade, ensuring they are coated evenly. allow them to marinate in the refrigerator for at least 30 minutes.
Preheat a cast-iron grill pan over medium heat until it is smoking hot.
Place the marinated herring fillets on the grill pan and grill them on both sides until they are cooked through, which usually takes about 10 minutes.
Once the herring is grilled to perfection, remove it from the heat.
