Start by washing the salmon fillets and patting them dry. in a bowl, combine the ginger garlic paste, salt, lemon juice, and mix well. rub this marinade over the salmon fillets and let them marinate for 15 minutes.
For the second marinade, mix together the grated ginger, finely chopped green chillies, greek yogurt, horseradish, vegetable oil, dill, coriander leaves, white pepper, and sugar. rub this marinade over the marinated salmon fillets and let them marinate for an additional 15 minutes.
Preheat the oven to 200ÔøΩc (gas mark 6). skewer the marinated salmon fillets onto long metal skewers, placing them skin side down on a baking tray. roast the salmon in the preheated oven for 7 minutes. then, transfer the tray to a hot grill and grill for an additional 2 minutes to give the salmon a slightly charred and smoky flavor.
Alternatively, you can cook the salmon on a hot barbecue. place the marinated salmon fillets skin side down on the grill and cook for 10-12 minutes, turning them over every 3-4 minutes, until the skins are crisp and well colored.
Serve the grilled salmon with dill and horseradish alongside lemon wedges and your choice of chutneys.
