To prepare the grilled broccoli and citrus spinach salad, start by cutting the broccoli into florets, slicing the carrot into thin strips, and segmenting the orange. set aside.
Zest the orange to collect the orange zest for the dressing. keep the zest aside.
In a grill pan or a regular pan, drizzle a tablespoon of olive oil. saut„© the broccoli and snow peas over high heat until they develop a slight char. this should take about 2-3 minutes. keep stirring them for even cooking.
While the vegetables are grilling, prepare the salad bed. arrange the spinach leaves on a serving plate. layer with purple cabbage and carrot strips.
Once the broccoli and snow peas are grilled to perfection, place them on top of the salad bed. also, arrange the orange segments on the salad.
