Prepare the cherry tomatoes: wash the cherry tomatoes and pat them dry. cut them in half.
Grill the cherry tomatoes: preheat your grill to medium-high heat. brush the cherry tomato halves with a little sunflower oil and grill them until they get grill marks and become slightly charred. this should take about 3-4 minutes. remove them from the grill and let them cool.
Prepare the mint paste: in a blender or food processor, combine the mint leaves, vinegar, honey, and a pinch of salt. blend until you have a smooth mint paste.
Temper the spices: in a small pan, heat the remaining sunflower oil. add the mustard seeds, fennel seeds, carom seeds, and black pepper powder. let them sizzle and splutter for a minute until they release their aromas. be careful not to burn them.
Combine the ingredients: in a mixing bowl, combine the grilled cherry tomatoes, the mint paste, and the tempered spice mixture. mix well until the cherry tomatoes are coated with the flavorful mint paste.
