Heat sufficient oil in a kadai or deep frying pan.
In a bowl, combine rice, finely grated ginger, red chilli powder, coriander powder, cumin powder, chaat masala, salt, peanuts, and gram flour (besan).
Roughly chop the coriander sprigs and add them to the bowl. mix well to combine all the ingredients. divide the mixture into equal portions.
Dampen your palms with some water and flatten each portion into small discs, creating pakoras.
Deep-fry the pakoras in hot oil until they turn golden and crisp. drain the fried pakoras on absorbent paper to remove excess oil.
