To prepare coconut cucumber neer dosa, start by washing the rice and soaking it in water for 2 hours.
In a mixer, grind the grated coconut and cucumber together to form a smooth paste.
Separately, grind the soaked rice with 1/2 cup of water to create a very smooth rice batter.
Combine the rice batter and the coconut-cucumber paste in a mixing bowl. add salt and mix well. adjust the consistency by adding enough water to achieve a smooth flowing batter.
The batter should have a thin coating at the back of the spoon and not a thick layer. if needed, add a little more water to achieve the right consistency.
