To prepare mango cottage cheese kunafa, start by making the syrup and the mango cream.
In a saucepan, make the sugar syrup by boiling water and sugar until the sugar has dissolved. boil for 3 to 4 minutes, then switch off the flame and add lemon juice.
Add saffron strands and rose water to the sugar syrup. set aside to cool completely.
In a mixing bowl, blend together cottage cheese, mango pulp, icing sugar, thandai masala, heavy cream, and fresh cream until well combined. keep this mango cream mixture in the refrigerator.
Preheat the oven to 180 degrees celsius for 15 minutes.
