To prepare the baked millet and cottage cheese rolls, preheat the oven to 200Êû≥c and grease a baking sheet with butter.
Cook the millets with 3/4 cup of water until they become soft and mushy. make sure the millets have absorbed all the water. if there is any excess water, drain it, and it can be used for soups.
In a large mixing bowl, combine the cooked millets, cottage cheese, finely chopped coriander leaves, butter beans, za'atar, and salt. mix all the ingredients well to form a uniform mixture. this will be the filling for the rolls.
Use a rolling pin to slightly stretch each bread slice, making it easier to roll the bread with the filling.
Place a spoonful of the millet and cottage cheese mixture in the center of each bread slice. wet the edges of the bread with a little water to help seal the rolls.
