To start preparing the zesty summer vegetable pasta, cook the penne pasta in salted boiling water as per the package instructions. once cooked, drain the pasta and reserve about 1/2 cup of the pasta water.
While the pasta is cooking, prepare the vegetables. cut the zucchini into thin slices.
In a saucepan, bring water to a boil and blanch the peas for about 2-3 minutes until they are tender. drain and set aside.
In a large skillet, melt the butter over medium heat.
Add the zucchini slices to the skillet and sautËúÖ for about 3-4 minutes until they start to soften and turn slightly golden.
