In a mixing bowl, whisk the buttermilk until it's smooth and well-blended. set it aside.

In a mortar and pestle or a food processor, crush the dried red chillies (if using), fresh ginger, and garlic cloves into a coarse paste.

Heat cold-pressed sunflower oil in a pan over medium heat. add black mustard seeds and cumin seeds.

Once the mustard seeds start to splutter, toss in the curry leaves and saut„© until they turn crispy.

Add the sliced red onion and the crushed ginger-garlic-chilli paste. saut„© until the onion turns translucent and the raw aroma of the ginger and garlic diminishes.
