Start by preparing the marinade for the chicken. in a bowl, combine ground cumin, smoked paprika, freshly squeezed lime juice, minced garlic, salt, extra virgin olive oil, and dried oregano. mix well to create a flavorful marinade.
Place the chicken breasts in the marinade and ensure they are evenly coated. allow the chicken to marinate for about 30 minutes to an hour in the refrigerator.
While the chicken is marinating, slice the onion and yellow bell pepper into thin strips.
Preheat a grill or a grill pan over medium-high heat. once hot, grill the marinated chicken breasts until they are fully cooked and have beautiful grill marks on both sides. this usually takes about 5-7 minutes per side, depending on the thickness of the chicken breasts.
