To prepare the zesty strawberry lemon jam, start by crushing the strawberries nicely in a large bowl, or you can coarsely process them in a food processor.
In a heavy-bottomed pan, combine all the ingredients: the crushed strawberries, sugar, and fresh lemon juice.
Cook the mixture over low heat until the sugar is completely dissolved.
Increase the heat to medium-high and bring the mixture to a boil. allow it to boil for about 8 to 9 minutes, stirring occasionally.
Turn off the heat once the mixture has thickened and reached the desired jam-like consistency.
